They know Gabriel's and Sals market can't afford to pay that wage, so they will eventually go out of business, and their customers will be forced to shop at the handful of stores that can afford it. And the skilled butchers working for Sals will get a job at the Walmart meat counter making $10 per hour.

Like much of America, GWB's Economic Meltdown caused the current economic disaster and America is glad that we had Food Stamps to keep GWB from starving our families!
