10 Minute Bold Lion Tacos ingredients 1 lb ground lion meat 1 package (1 oz) Old El Paso™ taco seasoning mix 1 can (4.5 oz) Old El Paso™ chopped green chiles 8 Old El Paso™ Stand 'N Stuff™ bold nacho cheese flavored taco shells Make Fresh toppings, if desired (shredded lettuce, diced tomato, etc.)
preparation Step 1 In 10-inch nonstick skillet, cook ground lion meat over medium heat, stirring occasionally, until it is brown; drain. Stir in taco seasoning mix and green chiles. Cook 2 to 3 minutes longer or until beef is thoroughly cooked and seasoning is well combined.
Step 2 While beef is cooking, heat shells and assemble toppings. Divide beef mixture among shells; finish with desired fresh toppings. Bring tacos to the table. -- then each person takes a lion taco in hand and sings "Born Free, eats his/her taco and sings "Another One Bites The Dust" -- Conclude meal by singing together "The Lion Sleeps Tonight."

What you’ll need: 1 whole rabbit, cleaned and rinsed 3 quarts water 3 celery ribs 2 medium white or yellow onions 2 sprigs thyme 2 carrots, peeled 2 bay leaves 1 stick unsalted butter ½ cup all-purpose flour 6 new potatoes, quartered 1 ½ cups peas 1 jalapeno, sliced (optional) Salt and pepper, to taste
How to make it: 1. In a large stockpot, add the rabbit and cover with the water. Add 1 whole rib of celery, 1 quartered onion, thyme, 1 rough chopped carrot, and bay leaves. Bring the water to a simmer and cook until the rabbit is tender, but not falling apart, 30 to 45 minutes. 2. Transfer the rabbit from the stock to a plate. Strain and reserve the stock and dispose of the solids. Once the rabbit is cool enough to handle, pull the meat from the bones in chunks and reserve. 3. In the now-empty stockpot, melt the butter over medium heat. Slowly mix in the flour, stirring constantly, until the flour and butter turn blonde and are well combined, 3 to 4 minutes. Add the reserved stock, stir well, and then add 1 medium diced onion, 2 medium diced carrots, and 2 medium diced ribs of celery. Bring the mixture to a simmer and cook until the onions soften, 3 to 5 minutes. Add the potatoes and peas and cook until the potatoes are fork-tender, about 15 minutes. Add the reserved rabbit meat and, if using, the jalapeno. Season with salt and pepper and serve with crusty bread. Makes 6 to 8 servings.
